Taco Salad (Destonee)

1 head of lettuce chopped
onion chopped
tomatoes
8 oz thousand island dressing
1 lb ground beef (drained)
1 can kidney beans (rinsed and drained)
1 pkg frito chips
1/2 pkg taco mix

Cook hamburger, add beans and taco mix.  Put all other ingredients together.  Serve over frito chips or tortilla chips.

Chili Verde ( Destonee)

9 tomatillos
1 1/2 pork roast chopped
3 serrano chilies (seeded)
1 clove garlic
chopped cilantro to taste

Boil tomatillos and chopped chilies until soft.   Add cilantro and boil 3-5 more min.  THen blend solids until smooth.  Brown pork roast.  Add meat to sauce with garlic and simmer in crock pot all day.  Serve with flour tortillas.

Home Made Chicken Pot Pie (Destonee)

1 pkg chicken gravy
1 10 oz pkg frozen veggies
1/2 shredded deli rotisserie chicken
2 frozen pie crusts (deep dish)

Make up gravy packet.  When cooked add frozen veggies to gravy.  Add chicken.  Pour into 1 of the pie crusts.  Let other pie crust thaw, when soft place on filled pie crust, press edges to seal.  Cook at 350 for 40 minutes or until crust is brown

Chicken Enchiladas (Destonee)

3 cups cooked chicken
2 tsp chili powder
1 cup sour cream
1/4 tsp garlic powder
1/2 cup chopped green pepper
1 can cream of chicken soup
1/4 cup chopped green onion
1 cup cheddar cheese
1 cup monterey jack cheese
3/4 cup salsa
10 flour tortillas

Combine chicken with sour cream, bell pepper, green onion, salsa, chili powder, garlic powder.  Stir in soup.  Place 1/2 mixture in center of each tortilla with some cheese.  Spread remaining mixture over top of tortillas and bake at 375 for 30 minutes. 

Rosemary Pork & Mushrooms with shallots (Destonee)

1 tbsp oil
2 lbs boneless pork loin chops sliced into 1/2" slices
1 cup shallots, chopped
2 cups mushrooms sliced
1 tbsp fresh rosemary (less if dried)
1 tsp salt
1 tsp pepper
1-14 oz can diced tomatoes

Heat the oil in a skillet and cook pork until browned.  Remove and drain excess oil and place pork in crock pot.  Add the remaining ingredients and stir.   Cover and cook on low for 8 hrs or high for 4 hrs. 

Mexican Fondue (AMAZING!!!!!!!!!!)

Sprinkle pan with garlic salt.  Pour in 1 can beer (near beer works fine too).  Heat until no bubbles. 
Grate 4 cups cheddar
 4 cups monterey jack cheese.
 2 tbsp chili powder
 1 tbsp flour (heaping) mix into cheese. 
Add 1/2 cup salsa to beer. 
1 can green chilies to beer.
 add cheese to beer mixture

Stir until cheese melts. 
Serve with veggies and french bread.  We usually have pepperoni, olives, frito chips, french bread, avocados, carrots, bell peppers, mushrooms, etc

Chicken Jaurez (Destonee)

1 deli cooked rotisserie chicken (shredded)
1 (7 3/4 oz) can green chilies diced
1 doz corn tortillas
1 cup milk
1 can cream of mushroom soup
1 onion diced
1 can cream of chicken soup
1 lb cheese

Cut tortillas into 1" strips.  Set aside.  Combine soups, green chilies, milk and onion.  Pour 3 Tbsp reserved chicken juice into 9 x 13 buttered casserole dish.  Using 1/2 of mixture layer tortilla strips then chicken, then soup mixture.  Repeat.  Top with cheese.  Refrigerate 24 hours.  Bake @ 300 for 1 hour 15 minutes.

Poulet De France (Destonee)

1 12 oz stove top stuffing
2 Tbsp melted butter
2 cup chicken broth
3 cups cooked chicken
1/2 cup chopped onion
1 can cream of mushroom soup
1/2 cup mayo
3/4 tsp salt
2 eggs
1 1/2 cup milk
1/4 cup green onions
1/2 cup chopped celery
1/2 cup cheese

In medium bowl mix stuffing, butter and 1 1/4 cup broth.  Mix chicken, 3/4 c broth, oinions, green onions, celery, mayo, and salt in another bowl.  Spread 1/2 of stuffing in 9 x 13 dish.  Spread chicken mixture over stuffing.  Whisk eggs, milk, soup in bowl.  Pour sauce evely over dish and sprinkle with cheese.  Bake at 350 for 30-40 minutes. 

Lemon Pepper Chicken (Destonee)

Sprinkle lemon pepper on 4-6 chicken breasts (or I like to use chicken tenders).  Bake @ 350 for 30 min. 

Mix 1 can cream of mushroom soup
1/4 cup mayo
1/2 cup milk

Pour over chicken and bake 20 more minutes.  Serve over rice.  VERY YUMMY!!

Bacon wrapped chicken breast (Destonee)

4 boneless, skinless breasts
8 oz cream cheese
1/2 cup chopped green onions
8 strips bacon

Soften cream cheese, add chopped green onions.  Mix well.  Pound and flatten chicken breasts, drop a heaping tbsp of cream cheese mixture in middle of each breast, pulling up each side.  Wrap with bacon strips and secure with toothpicks.  Sprinkle with course black pepper.  Bake at 375 uncovered for 30-40 min.  Brown under broiler for last ten min.  SO YUMMY!

Carne Asada Taco (Meka Sugano)

1 1/4 lb steak
2 Tbsp white vinegar
3 Tbsp soy sauce
4 cloves garlic
2 limes (juice)
3 Tbsp olive oil
1/4 tsp paprika
3/4 onion chopped
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp chili powder
1/4 tsp dried oregano
1/4 tsp cumin
cilantro chopped
lime juice

Medium bowl: whisk together vinegar, soy sauce, garlic, juice from 2 limes, olive oil, salt, pepper, garlic powder, chili powder, oregano, cumin & paprika. 
Place steak in flat glass baking pan.  Pour mix over the steak.  Cover and refrigerate for 1-8 hours

Mix chopped onions, chopped cilantro and lime juice.  Place in refrigerator.

Cook steak on grill.

Cut up steak into strips, place steak, onion mix and whatever other toppings you like on flour or corn shells.  Enjoy!

Oh Boy Supper (Owna Crofts)

Brown & drain 1 1/2 lbs ground beef
add diced medium onion and
1 cup finely chopped celery

Mix together:
1 can cream of mushroom soup
1 can cream of chicken soup
(no water)
1 Tbsp soy sauce 
season to taste

Simmer 10-15 minutes
Serve hot over heated chinese noodles (La Choy)

Bean and Potato Casserole

Slice raw potatoes in bottom of a 9 X 13 casserole dish.  (generous layer)  Cover with chopped onion.  Salt and pepper lightly.

Cook 1-1 1/2 lb hamburger.  (salt, pepper and drain)

Cover with 2 cans dark red kidney beans (drained)
top with 2 cans tomato soup.  Cover and bake at 350 approx. 2 hours. Serve

sauce spread (for rolls)

1 cup sugar
1 cup butter
4 Tbsp orange rind

Mix together

Yield:12 rolls

Feather Rolls

2 yeast cakes
1/2 cup warm water
1 Tbsp sugar
1/3 cup shortening
1/3 cup Sugar
1 cup lukewarm milk
2 tsp salt
2 eggs, beaten
5 cups flour

Mix first 4 ingredients.  Let sit for 15 minutes.  Add remainder ingredients.  Allow to rise.  Bake at 350 till golden brown.

Makes 24 rolls

Sourdough Cinnamon Rolls

1/2 cup starter
1 cup evaporated milk
1/2 cup water
2 cups flour
1/4 cup soft butter
3 Tbsp sugar
1 egg
1 1/2 cup flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tbsp melted butter
1/4 cup brown sugar
1 1/2 tsp cinnamon

The night before combine starter, milk, water, & 2 cups flour.  Cover and let stand at room temp. overnight.

Beat together butter, sugar, egg.  Blend in sourdough mixture.  Combine 1/2 cup flour, soda, baking powder, and salt.  Mix with other mixture.  Turn out on board and knead adding a bit more flour if needed. 
Roll out.  Brush with melted butter.  Sprinkle brown sugar and cinnamon.  Roll, cut, dip in melted butter and raise about 1 hour.  Bake at 375 25-30 minutes.  Frost.

Chocolate Fudge Squares

1 Cup shortenening
2 Cup Sugar
1 Cup nuts
1 cup milk
4 eggs separated
1 tsp vanilla
1 1/2 -2 cup flour
1/2 tsp salt
6 tbsp cocoa

Cream shortening and sugar.  Add egg yolks.  Sift dry ingredients together.  Add alternately with milk and add nuts.  Beat egg whites stiff and fold into batter last.  bake 20-25 min at 350.  Ice with Chocolate Icing

Dump cake

can chunky pineapple (drained)
canned cherry pie filling

Put in cake pan (greased and floured)  Take a Duncan Heinz cake mix and mix up dry ingredients with butter till crumbly.  Put on top of fruit & bake about 30 minutes

Serve warm with whipped cream

Lemon Jello Cake

1 pkg yellow cake mix
1 pkg lemon jello
Few drops of lemon extract
4 eggs
2/3 cup oil
2/3 cup water

Mix allat once for 5 min.  Bake 25-30 minutes.  While cake is hot prick holes in the cake with a fork.

Topping:  (to pour over cake)
Juice and rind of two lemons.  Two cups of powdered sugar.  Mix and pour over cake while hot.

Delicious cake made from old fruit

1 cup sugar (1/2 brown and 1/2 white)
2 cups flour
1/2 tsp salt
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/4 tsp. cloves
2 eggs
1 cup salad oil
2 cup drained old fruit
1/2 cup each of nuts and raisens

Combine sugar, flour, salt, baking soda, baking powder, and spices together and set aside.  Beat eggs and salad oil until creamy.  Add fruit and dry ingredients.  Beat until smooth. Add nuts and raisens.  batter will be smother if fruit is previously blended.  Bake at 350 for 30 minutes.  Cake is rich enough without frosting.

Glorified Rice (Kathy)

2 cup cooked rice (chilled)
1 small can crushed pineapple
3/4 cup sugar
1   3 oz box strawberry geletin
1 pt whipped cream or cool whip

Dissolve geletin in pineapple juice mixed with enough water to make 1 pt liquid.  Add sugar when mixture begins to thicken.  Whip together until light in color.  beat in pineapple, add rice and fold in cream.  Pour into molds and serve with morchino cherry & whipped cream.

Pistachio Pudding Cake

54 Ritz crackers (crushed finely)
1 1/4 sticks margarine
Melt butter and mix with crackers.  Bake at 350 in 9 X 13 pan for 10 minutes.

2 pk pistachio pudding
1 1/3 cup milk
Beat together

Add 1 qt soft vanilla ice cream.  Pour into crust and spread cool whip on top. 

5 heath bars (crushed)  Sprinkle on top.  Refrigerate.

Picnic Cake

3/4 cup chopped dates
1 cup water

Boil for 3 minutes then add 1 beaten egg.

Cream together 1 cup butter and sugar, 1 1/2 tsp vanilla, 3/4 cup oil.
Sift 1/2 cup whole wheat flour, 1/2 tsp salt.

slowly combine all ingredients.  Pour into greased pan.  Sprinkle 1/2 bag of chocolate chips and 1/2 cup brown sugar, 1/2 cup chopped nuts on top.

Bake at 350 for 45-55 min

Pineapple cake (Klista)

2 eggs
2 cups sugar
2 cups flour
1 tsp baking soda
1/2 cup chopped nuts
Mix in a mixer and then add:
1 large can crushed pineapple and the juice

Bake 9X13 pan for 45 minutes at 350.
  While still hot top with icing.

Icing:
8 oz cream cheese
1/2 stick butter
1 3/4 cup powdered sugar
1/2 cup chopped nuts
1 tsp vanilla

Banana Graham Cake

1 ripe banana
1 tsp cinnamon
4 graham crackers
1 Tbsp baking powder
2/3 cup nonfat dry milk
2 tsp sugar

Beat banana until smooth.  Roll crackers into fine crumbs.  Add all ingredients to the banana and beat until smooth.  Pour into a small loaf pan that has been sprayed with cooking spray.  Bake at 425 for 15 minutes. 

Pumpkin Cake

1 large can pumpkin  (approx. 2 cups)
3 1/2 cup sugar
5 eggs
2 cups oil
1 1/2 tsp nutmeg
1 1/2 tsp cloves
4 1/2 tsp cinnamon

Mix 4 1/2 cups flour, 1 1/2 tsp salt, 1 1/2 tsp baking soda, 2 cups nuts in a bowl.  Add remaining ingredients, mix together well. 
Makes 4 loaves or 1 large cake.
*you can also add chocolate chips if you would like*

Bake 1 hour at 350

Funnel Cakes

1 egg
2/3 cup milk
2 Tbsp sugar
1/4 tsp salt
1 1/2 cup flour
cooking oil

Pour couple of inches of cooking oil into heavy fry pan and heat slowly to 375.  While oil is heating, mix ingredients well.  When batter is creamy pour into large funnel.  Swirl about 1/2 cup of batter into heated oil.  Fry till golden brown, turning once.  Place on paper towel and blot oil off. 

Sprinkle with powdered sugar, and put what toppings on you would like.
